Hello friends, this week we were at the Salamanca fair.
Every year, on September 12 and 13, manufacturers of Iberian meat products and ranchers meet in the main square to do business.
This year, the most widespread comment is that there is very little cured ham, especially in the categories of bait and bait ham, so it is possible that this Christmas there will not be enough production to cover all the demand.
In 2013 and 2014 the sector was still coming out of the greatest crisis it has ever experienced and the Iberian pig herd had not yet recovered. This, together with the record of tourists that we have had in recent years in Spain and the greater national consumption due to the end of the crisis, has caused that there is little cured ham on the market.
